Aloo ka Pulao
Aloo and gobhi, an age-old combination that is one of my favorites too. I made a pulao using it just for fun and it turned out to be an invention in itself.
- Basmati Rice,
- Bay leaf,
- garam masala,
- Turmeric powder
Clean, wash and soak rice 15 minutes. Drain and keep aside.
Heat oil in a pressure cooker and add bay leaves and cinnamon and fry for few seconds.
Add turmeric powder, dry ginger powder, chilli powder, potatoes and cauliflower and saute’ for 2 minutes.
Add rice and saute’ for 2 more minutes.
Add 3 cups of water and salt and pressure cook for 2 whistles.
Allow steam to escape before opening the lid.
Add garam masala and mix gently.
Serve hot garnished with mint leaves.
