Baigan Bharta

Baigan Bharta is a healthy food, eggplant that is the main ingredient, is low in fat and sodium and high in dietary fiber, vitamins C and B6 magnesium, phosphorus and pottasium. Add to that the tomatoes, green chillies and onion and you’ve packed a mighty nutritional punch in one single dish!

    Directions:

    Add oil in a pressure cooker.
    Add sliced egg plant, tomatoes and the major ingredients into cooker. Then add salt, ginger garlic paste, turmeric powder and tamarind paste,half cup of water.
    Turn on heat and close the cooker.
    Once pressure is built simmer it and cook for five minutes.
    Release pressure and open the cooker.
    Turn on the heat and cook until water dries. When oil comes up your dish is ready to serve
    Garnish with coriander leaves.
    Serve hot with naan
