Chicken Veg Pulao

With rice being a staple food at home, its inevitable that it finds its way more often than not. Eating just rice is like plain calories without nutrition hence vegetables and some sort of protein is a must.In this dish we use vegetables with chicken.They can be added to almost all dishes and make it not only hearty and delicious but also nutritious.

  • Ingredients:


    Heat oil in a large pan add chicken, coriander, and cumin, and fry over a medium heat for 5 minutes
    Remove from pan and set aside.
    Lower heat, add 2 tbsp of oil,onion, red pepper, and garlic, and fry until softened.
    Stir in rice add chicken and pour three quarters of stock.
    Add bay leaves and saffron and bring to the boil.
    Simmer until the rice is almost cooked (adding more stock as needed).
    Add chickpeas and sultanas and cook until rice is tender.
    Serve with chutney or raita
