Chinese Chicken Rice
A quintessential comfort food~ a bowl of steaming white rice cooked to just the right consistency, filled with bits of meat and eggs. Fried rice is one of the world’s most popular rice dishes and the beauty of fried rice is that it is very adaptable, each country adapting its own version.
Heat oil in a large skillet over a medium heat.
Add onion and saute’ until soft.
Add chicken and soy sauce in it and fry for 5 minutes.
Add carrots, celery, red bell pepper, peas and green bell pepper and fry for more 5 minutes.
Add rice and stir it thoroughly.
Put scrambled eggs and 1/3 cup soy sauce in it.
Cover and let it cook for 5 mins
