A Moghlai version of delicately spiced rice.Shahi pulao is a mix vegetable pulao made with a difference and tastes good with curd and pickle
- Basmati Rice,
- caraway seeds,
Boil rice.Drain and cool.
Heat oil and fry cashewnuts. Remove and keep aside.
Fry raisins in same oil. Remove and keep aside.
Add cinnamon, cloves, cardamoms and green chillies to the oil and fry again.
Add rice, cottage cheese, green peas, fruit pieces and salt and mix well.
Warm saffron a little, rub in a little warm water and add to rice.
Garnish with fried cashewnuts and raisins.
Serve hot chutney.
