Mushroom fried rice makes a satisfying vegetarian main or side dish. It’s flavored with ginger and sesame oil and has a subtle kick from red pepper flakes

    Heat oil in a wok.
    Fry cashew nuts and onions.
    Add mushrooms, chilly powder, salt, coriander powder,green peas and tomatoes.
    Add little water in it.
    Cook for 8 mins.
    Mix cooked rice
    Garnish with coriander leaves.
    Serve hot
