A traditional recipe to make mutton in a mixture of onions, tomatoes and spices.In it the richness of the mutton is balanced with the acidity of the tomatoes. Ground coriander and paprika is fried with some oil to release its natural flavours and oils before the rest of the ingredients are added in.
- Coriander seeds,
- cumin seeds,
- Turmeric powder
Heat oil in a deep pan and fry onions in it till golden brown.
Add ginger,garlic, turmeric powder, coriander powder, cumin powder, chopped meat and salt.
Cover and cook on a medium heat for about 10 minutes.
Add chopped chillies, tomatoes and coriander leaves
Mix them well.
Cover and cook on a medium heat for about 45 minutes.
