Sajji is a native dish of the desert province of Balochistan, Pakistan. It consist of whole chicken in skewers .Sajji is said to be done when its half tendered, generally its served with special bread called “kaak”.
- black pepper,
- Black salt,
- Citric acid,
- Coriander seeds,
- cumin seeds,
- Ginger Garlic Paste,
- Lemon juice,
On a heated griddle. Add whole red chilies, ajwain, fennel seeds, cumin seeds and coriander seeds.
Cook for a minute and crush the spice into mixture.
Add black salt and citric acid to it.
Place whole chicken in a shallow dish.
Add salt, vinegar, red chili powder, black pepper and garlic paste.
Cover and marinate for overnight.
Preheat the oven at 180 degree.
Bake marinated chicken for 30 minutes.
Now insert baked chicken in a skewer and toast on coal pieces for some time.
Brush chicken with oil.
Sprinkle prepared spices and lemon juice on top of it.
Serve hot with naan
